My husband loves a co*cktail blended in the blender. He just adores the texture of these mixed drinks so I just knew this would be perfect for a romantic evening with him. In a blender, I simply tossed in the ice. I used a jigger to measure out the Raspberry Rum, Creme de Cocoa (white), and half n half cream, but I include measuring cup amounts for those of you who don’t have a jigger around. For a stronger co*cktail, you could certainly reduce the half n half to 1.5 oz while increasing both liqueurs to 3 oz (or 1/4 cup and 1/2 cup respectively).

The Raspberry Rum, Creme de Cocoa, and half n half are poured over the ice in the blender and blended until smooth. Once smooth, the co*cktail is poured into your favorite co*cktail glasses. I prefer either a hurricane glass or a daiquiri glass. Both glasses are pictured on this page. You can purchase either glass in the hypertext link in the “Recommended Kitchen Tools” section of this page. This recipe makes enough for two drinks with a little leftover for topping off a little later.

I chose some simple chocolate shavings and fresh raspberries to garnish. A cheese grater was used to shave the chocolate bar over the co*cktail. Whipped cream would also make a lovely garnish. You could also dip the rim of the glass in chocolate syrup or chocolate fudge before pouring the co*cktail into the glass. A whipped cream and chocolate combo could be used similar to the garnish on my Frosty Grasshopper co*cktail.
